Let me fill you in on a test we have been doing. We normally brew with well water. However, if we begin an actual brewery in the downtown area we may not have access to a well and will have to rely on city water. The type of water you use in a beer is very important and it involves some chemistry and knowledge to master and blah blah blah. So we are just brewing identical recipes with well and city water to see the difference. Today I was going to brew my porter (which is delicious by the by and you should head on over to Steves for a taste) with city water, but tis a bit chilly out so I decided against it. I just wanted to brew them as close together as I could…but oh well(water).
